Ideal as a side-dish with a lean chicken-breast burger or to serve your friends when entertaining, these beetroot 'chips' are so flavoursome and crispy you almost won't believe it's a vegetable...

"They’re definitely a healthier alternative to the usual deep fried chips," says ASICS FrontRunner and dietician Mariella Sawyer. "They’re high in several nutrients such as fiber and inorganic nitrates, which have been found to help with performance in exercise," she says.

Not only that, but, according to Sawyer they also contain compounds that fight inflammation, making them a great veg to add to your diet.

Here's how to do just that:

Ingredients:
12 Beets
1/2 cup olive oil
2 tsp sea salt

Method:
Preheat the oven to 180 degrees and line an oven tray with baking paper. Make sure the beets are well scrubbed. Cut them in even circles, as thin as possible (a chef's mandoline is best). Place the slices into a bowl, adding olive oil and salt before giving it all a good toss. Now, allow the beets to rest for 20 minutes. At the least. This is crucial to the crispiness as it allows them to release the excess juices. 

Once they've shed their excess liquid, give them another shake and then drain off the liquid. Place the slices on the baking tray and bake for around 45 minutes (until crisp), careful to not let them go brown.
