If you haven't made a microwave cake or dessert of some sort during lockdown are we even mates? No, seriously, while we are usually not big fans of microwave cooking, during times such as these you have to do make do. 

This peanut cake is packed with protein power.

Ingredients

2 tbsp ground almonds (can substitute with any nut)
1 scoop of protein powder (whatever flavour you have in the cupboard will do)
1/2 tsp baking powder
1 tbsp peanut butter
1 egg
1 banana, mashed
1 tsp olive oil

Method

Combine all the ingredients in a bowl (or food processor) and mix it together until fairly smooth. Rub the inside of a large mug with a dash of oil or a tiny bit of butter, you can use baking spray if you have to. Fill it up to around 3/4 of the way with your batter. Put in the microwave and cook on high for 90 seconds.

Test for doneness by poking with a fork, if it is still very sticky cook for a further minute to 90 seconds. Enjoy straight from the mug. We know of some FrontRunners who have used chocolate protein powder and served it with custard as a dessert.
