Run home to this tonight...This warm couscous salad is super simple to whip up at home and provides a good balance of carbs and protein without sitting heavily on the stomach. 

It will keep well too for a leftovers lunch the following day. Enjoy:

Ingredients
1kg butternut (chopped into cubes)
1 punnet cherry tomatoes (chopped in half)
2 cups of chicken stock
1/4 cup Orange juice
1 teaspoon minced ginger
2 cloves of garlic (finely chopped)
2 cups couscous
500g sirloin steak
3 spring onions (sliced)
olive oil
Salt


Method
Preheat the oven to 210C. In a roasting tray, roast the butternut with a little olive oil and half of the garlic for 20 minutes. Add the tomatoes and roast for another 10 minutes. Place chicken stock in a pot and bring to the boil. Remove from heat and add the orange juice, ginger, and couscous, stir thoroughly and cover with a lid. Stand for 5 minutes. Transfer to a large bowl and carefully work through with a fork to separate the couscous grains. Fry the steak in a non-stick pan seasoning with a little bit of salt and the rest of the garlic, to a medium-rare temperature. Or the doneness you favour,. Rest for 5 minutes before finely slicing the meat. Now add spring onion, asparagus, butternut and tomatoes to the couscous and toss until combined. Arrange the steak on top.

This should serve four people and take less than 30 minutes to prepare.
