Whip up this epic (and oh, so easy) TREAT THIS SEASON.
Coconut is the taste of the tropics, the taste of summer! And, as the days get shorter and colder here in sunny South African, there couldn't be a more creative (and refreshingly delicious) way of serving it.
Try this easy, low-cal sorbet made with pineapple, tropical fruit of your choice and coconut water.
Ingredients
- 1 can of pineapple chunks in it's own juices (not in syrup)
- 1 cup 150 grams frozen mango chunks (or your choice of tropical fruit).
- 1 can of coconut water (you could use coconut milk for a smoother more 'ice cream-like' texture but it usually has more additives)
- 2 tablespoons coconut sugar (optional)
Method
- Pre-freeze the pineapple and mango (smoothie style), this is the key to the 'sorbet.'
- Simply add all of your ingredients to a food processor or blender and blend until smooth. Easy as you like... .
- You could serve immediately (it would be more of a dessert smoothie), or you could allow it to set for an hour or four in the freezer rendering it more of a true 'sorbet.'
- Garnish with desiccated coconut, enjoy.
